Enjoying Winter Running + The Easiest Healthy Dinner

In non-fitness studio news, I got in a great run yesterday with my brother!

I had to take him to the airport around 11 and we wanted to get in a workout before he left, so I got up early, worked for a few hours, and then grabbed him around 9:30 for a late morning run. It’s days like these where I’m super grateful to have a flexible schedule. It was really cold but so nice and sunny out!

It was a great fun – I felt strong and we had fun chatting.

We ran a SUPER hilly route along the Custis/W&OD trail, so I was really pleased with our overall pace! Bringing back that speed!

Splits:

  • Mile 1: 8:37
  • Mile 2: 8:21
  • Mile 3: 8:10
  • Mile 4: 8:58
  • Mile 5: 8:37
  • 0.24 mile nubbin pace: 7:41

On the food front, I wanted to share a really quick and awesome dinner that Matt and I made recently, in case you guys need some new easy weeknight dinner ideas!

We wanted something easy and we had a lot of eggs on hand, so Matt whipped up a very loose variation of Huevos Rancheros. He sautéed some onions and baby spinach in a pan (peppers would have been good here too, we just didn’t have any), then, once they were soft, added in a package of cooked 90 second brown rice and stirred until hot.

We divided the rice/onion/spinach mixture on two plates, fried up a couple eggs (2 eggs for me, 3 for him), and threw them on top with some hot sauce and salsa. Done!

It was SO good, and ready in like 5 minutes. Try it!

Before I go, a couple things:

  • As I mentioned, I’m writing some freelance articles for the Wild Blueberry blog this winter/spring, and my first one went up yesterday! The post focuses on having a healthy new year, and includes a full couple day’s worth of meal ideas (breakfast, lunch, snacks, dinner, and dessert) as well as some nutrition tips.   • On a completely unrelated note, my brother-in-law’s girlfriend and my friend, Morgana, is in an ad competition that has the chance to be aired during the Superbowl and win her (and those who she created the video with) a million dollars. Their ad (which is for Doritos, obviously not something I normally recommend, but I do love me some Superbowl ads), called “What Could Go Wrong?” is hilarious and also features some of her beautiful dance moves (she works as a dancer in NYC – so cool).
