Two Tasty Dinners

Hi friends! I decided to save my collection of best health tips and recipes blog post for the new year until Friday, so for today, we have more food!

On Monday night, I was craving something healthy, light, and warming. After a look around online, I found a tasty looking recipe for Chicken and Vegetable Quinoa Soup from a Runner’s World post on easy, one pot meals. Perfect!

It was really fast and easy to throw together, too. I followed their recipe but also added garlic to the mix, which got sautéed in the pot along with onions and carrots.

Once the onions were mostly translucent, in went raw sliced chicken, mushrooms, and chopped celery.

After the chicken was mostly cooked, in went chicken broth!

And quinoa.

Bring to a boil, simmer 15 minutes or until quinoa is soft, and serve! I also threw in some dried rosemary, sage, and oregano, plus some pepper (and a little salt since the broth was super low sodium).

Voila! So good. And yay for leftovers.

As for last night, Matt and I are back to our Tuesday night cooking challenge! Last night was his night, and he threw together quite the feast using a bunch of veggies we had from From the Farmer. First up – roasted carrots and acorn squash:

We used this Urban Accents Asian Curry & Honey Veggie Roaster that was randomly in the pantry – I think I got it as a sample in a blog trip bag at some point? It was really good!

He also sautéed up some onions, spinach, bread crumbs, and cheese to make a filling for Portobello mushroom caps. The final result reminded me of a more dude-ish version of my Stuffed Portobello Mushrooms recipe!

Dinner is served! Plus our main event, steak (topped with another little mushroom). All of it was delicious!

Plus a pretty salad on the side, which got an A+ for presentation. :) He also made a really good homemade mustardy vinaigrette using garlic, flax oil, lemon juice, and dijon mustard.

And now, it’s back to work for me! This month is going to be crazy – in addition to blog stuff and AnneTheRD clients, I have a few freelance articles to write, Jason and I are finishing up the sports nutrition e-book (it will be released in a few weeks!!), and Gina and I are launching the Winter Shape Up (<— link to last year’s if you don’t know what I’m talking about) on January 26! Lots of excitement to come. Stay tuned!
