On Christmas morning, after opening our stocking presents from Santa and awaiting my grandmother’s arrival to open the presents under the tree, I whipped out my parent’s blender and made a delicious smoothie. This Vanilla Mint Smoothie came out not too sweet and very refreshing – the perfect snack/light breakfast before diving back in for more present opening.
I think I need to put mint in smoothies more often. It was so good! I threw some spinach in there, too, for added nutrient power (that you can’t taste!) and a fun green color to go with the mint theme. For some protein, I threw in a container of vanilla Greek yogurt. If you’re vegan or avoiding dairy, you could do a hemp or brown rice protein powder instead.
Unsweetened vanilla Almond Breeze almondmilk served as the base of the smoothie. If you like your smoothies sweeter, try using the sweetened vanilla almondmilk, or use the unsweetened and add half of a large (or one whole small) very ripe banana.
Vanilla Mint Smoothie
Prep Time: 5 minutes

Ingredients (1 smoothie)
- 11 oz (~1 & 1/3 cups) Almond Breeze unsweetened vanilla almondmilk
- 5 oz container Greek vanilla yogurt
- 2 Tbsp. fresh mint leaves
- 1 cup baby spinach, packed
- 1 cup ice
Instructions
Toss all ingredients into a blender, blend, and enjoy!
