Holiday Week Eats and Exercise

Hi friends! Popping back in to share some of the food and fitness highlights from the past week, not including the actual Christmas eve feast. :)

On the food front, leftover turkey has obviously been the highlight!

Matt and I made a really good leftover turkey soup over the weekend. We started with a big pot of water and the turkey carcass and added some carrots, celery, peppercorns, and bay leaves to the mix, too. We brought it to a boil then let it simmer for a few hours. (After taking this photo we added more water so it covered the carcass.)

We strained everything out of it, leaving us with a delicious homemade turkey broth! To that, we added leftover turkey and fresh veggies – more celery and carrots, plus some baby spinach and mushrooms. I also threw in some cooked 90 second brown rice. It came out really well, and was easier than I thought it would be!

I’ve also been loving leftover turkey salad – this one had baby kale + string beans + pomegranate arils + walnuts + feta + avocado + turkey. Yum!

The other big food highlight was a fun holiday potluck on Sunday night at my high school friend Lara’s place! She invited a bunch of us over for our annual holiday high school crew reunion. :) I always love catching up with these ladies – wish they all lived here! <3

Lara and her husband Jim made tacos for everyone, and we all brought sides/desserts. My contribution was a salad, you know, since I’m a dietitian and all. 😉 I made it Mexican themed – mixed greens + black beans + peppers + feta + avocado. Topped with a homemade vinaigrette (balsamic vinegar + olive oil + lime juice + mustard). Yum! Colorful.

On the fitness front, I’ve gotten in some good workouts over the past week, too!

Matt and I got in a 10 miler for our half marathon training on Saturday. This one felt tough after all the good food and relaxing lately, but we made it happen. Matt was nice and played my favorite country Pandora station (“Cruise” – it’s all fun upbeat stuff) on his phone for the first part of the run when I was feeling rough. Near the end, when he needed a boost and I was in a better groove, we switched to more Matt-friendly music. :)

We had the homemade turkey soup after our run and it was soooo good – salty, lots of liquid, and protein packed – perfect recovery meal.

I also introduced my brother to Urban Athletic Club! He really liked it – and Matt came along for the class, too. Teisha, my fave, was teaching and she kicked our butt, as always. Here we are monkeying around after class. :)

I also hit up a yoga class at Blue Nectar Yoga in Falls Church on Sunday morning via ClassPass. It felt good to stretch out after the long run Saturday! Oh and yes, I’m wearing flip flops in December. The weather here has been soooo weird lately.

Lastly, Matt and I got in a run yesterday!

Just a short jaunt to shake out a bit – and to work up an appetite because we had an amazing night of eats ahead of us! More on that tomorrow – stay tuned. :)
