Gearing up for the Holidays!

Morning guys! We’re gearing up for the holiday fun over here – see the end of this post for some holiday recipe ideas!

It’s a Flour Free Breakfast Pancake (<- recipe) sort of morning, don’t you think?

Always hits the spot, especially after a sweaty workout! I hit up Urban Athletic Club via ClassPass this morning for one last pre-holiday serious sweat session.

I’m planning to run over the break, but wasn’t sure I’d be doing any boot camps – felt good to get it in. It was a tough one today – Kathleen and I were seriously struggling by those push ups at the end! But we saved enough energy to do some extra jump roping for video purposes, obviously. Check the fun video out over on Instagram. Next time: double dutch. 😉

In other news, I made a tasty lunch yesterday that I thought was worth sharing in case you guys want to recreate it!

This was super fast and easy to make and would make a great dinner, too. In a bowl, I threw some greens (arugula), 90 second brown rice, avocado, cilantro, peppers, and leftover string beans. Then I topped it with some chili lime shrimp, which was just shrimp pan seared in a little oil with some chili lime seasoning! My friends at McCormick sent me this fun spice pack (chili lime + shawarma seasoning + turkish seasoning) as a Christmas gift and I was excited to bust it out!

So easy and really good! No dressing necessary – just a little Cholula chili garlic hot sauce (the best). :)

And now, back to watching the rain fall. Weirdest December weather ever… so warm and humid!

I’m working from home this morning and then looking forward to taking the rest of the week off! I might pop back in to say hi, but in case I don’t, Merry Christmas/happy holidays, my friends! I’m thankful for you. :)

We’re sticking around DC for the holidays and have a fun Christmas Eve feast planned with family. I’m in charge of salad (I’m thinking a massaged kale salad is in order… any recipe faves?) and veggies (string beans?), my brother is doing the mashed potatoes, my mom is roasting a turkey, and Matt is frying a turkey (we just bought this cool oil-less turkey fryer – we’ll see how it works!). Other relatives are in charge of drinks and dessert!

I’ll leave you with some holiday recipe ideas. I might whip up the bean dip for us to snack on pre-feast…
