When I was in my early 20’s and going out on the town all the time, chicken fingers were always my late night diner food of choice. There’s just something about biting into a delicious, crisp, hot, juicy chicken tender smothered in ketchup that makes me swoon. I hardly ever eat them now, though, because a) I don’t often find myself in diners at 3 a.m. anymore (thank goodness), and b) Fried food isn’t usually worth it because it makes me feel like crap.
But then – last night, this happened:

Oh, yes. The chicken fingers were just as delicious as I remembered – but this time, they were healthy!

Healthy Diner-Style Chicken Fingers
(makes 3 servings)
Ingredients:
- 6 chicken tenders
- 1 egg, beaten
- 1 Tbsp. dijon mustard
- 3/4 C spelt flour (or whole wheat flour)
- 1/8 C finely ground flaxseed (optional)
- A few shakes each of salt and pepper
Instructions:
Preheat oven to 375.
1) In a small bowl, combine the egg and mustard. On a plate, mix the flour, flaxseed, and salt and pepper.

2) One by one, dredge the chicken tenders in the egg/mustard mixture, then in the flour mixture until fully coated (shake off any excess). Place the coated tenders on a cooking sprayed or nonstick baking sheet.

3) Bake at 375 for 12 to 15 minutes, or until golden brown.

SO good. I enjoyed my chicken tenders with lots of ketchup and some roasted sweet potatoes and asparagus.

I’m heading off to class and then spending the afternoon finishing up my take home Epidemiology exam. Definitely my least favorite class this semester – ugh!
