Nectarine Ice Pops Recipe

It’s August, it’s hot, and it’s (REALLY) humid. Clearly this calls for ice pops – nectarine ice pops, to be exact!

This is this month’s sponsored Almond Breeze partnership creation, and it features my favorite of their products: coconut almondmilk. It’s like vacation in a glass – or, in this case, on a stick.

This is basically the easiest recipe ever – besides the almondmilk, the only other ingredients are chopped fresh nectarines (SO good right now) and a little pure maple syrup for extra sweetness. Peaches or apricots would also be delicious in this recipe, or even a mix of all three – feel free to get creative! You can toss in some berries for color, too – blueberries or chopped strawberries would be a pretty and tasty addition.

To make these ice pops, you’ll blend some of the nectarines with the almondmilk and maple syrup. Then, place some additional finely chopped nectarines into a popsicle mold to add some nice texture, pour the blended mixture on top, and freeze! Adding some un-blended fruit into the mix is key, because we all know popsicles with large chunks of fruit are cooler than popsicles without large chunks of fruit. Am I right?!

About 2 hours later and you are ready to rock.

Nectarine Ice Pops

Prep Time: 10 minutes + freezer time

Cook Time: none

Ingredients (10 popsicles)

  • 2 cups roughly chopped nectarines
  • 3/4 cup Almond Breeze Almondmilk Coconutmilk Original Unsweetened
  • 1 Tablespoon pure maple syrup
  • 1/2 cup finely chopped nectarines

Instructions

  • Place the roughly chopped nectarines, almondmilk, and maple syrup in a blender and blend until smooth.
  • Divide the finely chopped nectarines among the wells of a popsicle mold, pour the blended mixture over, insert popsicle sticks, and freeze for at least 2 hours, or until solid.
