For this month’s McCormick partnership post, they challenged me to come up with a fun recipe using either apples or pumpkins – two of my absolute fall favorites. Since I had some apples on hand to play with, apples it was!

During the rest of the year, I could totally take or leave apples. But in the fall, when they are perfectly in season, it’s a completely different story. There’s nothing quite like a perfectly ripe, juicy, and extra flavorful October apple.

I love apples many ways – on their own (usually shared with Matt), in baked goods (see the end of this post for some of my favorite healthy apple baked goods), in apple cider, of course, and in savory forms as well. Cheddar and apple? Awesome combination – try it on a homemade pizza or a sandwich with turkey.

Another fall love of mine? Apple cider donuts. Is anyone else obsessed with those? I have no idea if there are even apples in them, but man are they tasty. I remember enjoying them as a kid in New England – the tiny little farm stands have the best ones. Fun fact: I had an apple cider donut on my wedding day, before our ceremony, while decked out in my dress and in full makeup (my makeup artist was less than thrilled). Our friends had gone to a farm nearby that had them and I wasn’t about to miss out!

But for now, let’s go with apple chips. I’ve been loving apple chips lately since I have seen them popping up in shops as an alternative to regular chips, so I thought I would try my hand at making them at home.

As it turns out, apple chips are really easy to make! We don’t have a dehydrator so I simply baked these, and they turned out great. They take awhile, but you only need to spend a few minutes slicing them, toss them on a baking sheet, and then set a timer and walk away. Easy!

To amp up the fall flavor, I sprinkled a little apple pie spice on these before putting them in the oven. Delicious!

I’m excited to bring these with us on our wedding anniversary trip hiking adventures this weekend. My only regret is not making more! Matt tried them and proclaimed them “Delicious – way better than store bought.” Success! I hope you love them, too.

Prep Time: 5 minutes

Cook Time: 3 hours

Ingredients

  • Apples (any kind, as many as you like!)
  • Apple pie spice

Instructions

Preheat oven to 200 degrees F.

Slice apples very thinly and discard seeds. Arrange apple slices (without overlapping) on nonstick or cooking-sprayed baking sheets. Sprinkle with apple pie spice.

Bake apples for 1 hour, then flip and continue baking for 1 to 2 more hours, flipping occasionally, until the apple slices are crunchy and no longer moist. The thinner the apples, the less time they will need to bake.

Store in an airtight container and enjoy!
