A Homemade Vegan Feast

On Tuesday evening, I was reunited with my friend Gena!

For the past few months, Gena and I have settled nicely into having weekly yoga, food, or walking dates, but since we’ve both been traveling a lot the past month it had been way too long since we’d hung out. I missed her so!

Gena had some fun new recipes she wanted to try so she invited me over for dinner at her place on Tuesday. Catching up over a delicious home cooked vegan meal? Sounded good to me! Look at this lovely spread that was waiting when I arrived – how sweet! And oh, to have a dinner table that gets natural light. You fellow food bloggers will understand. :)

First up on the menu was a beautiful salad. I never think to buy radishes – they’re so pretty in salads!

We enjoyed the salads topped with some roasted carrots. I also never thought to roast carrots – they were SO good! Very sweet.

Next up was a fun beet dish since Gena knows I <3 beets: Beet Tartare with Cashew Cheese! (Click on the name to check out the recipe over on her blog!)

So good. This would work with hummus instead of cashew cheese if you’re not feeling the cashew cheese, but it was a fun addition! I’ll have to try making it sometime myself.

For our main dish, we had kelp noodles with pesto, white beans, and sundried tomatoes. Simple, nutritious, and tasty.

Kelp noodles are a lot like rice noodles in texture. Don’t be scared off by the name – they’re good!

To drink, Gena requested kombucha, so I brought us two different kinds – gingerade and multi-green, which looked exciting. They were both really good! Have you guys tried kombucha before?

I arrived at Gena’s at 7, so I couldn’t believe it when I looked at my watch and saw it was 10 p.m. before we knew it! Gena’s the type of friend where we can go from laughing hysterically about something silly to discussing the meaning of life in about 5 minutes, and before you know it, 3 hours have passed. :) Thanks again for the fun night, girl! Next time – my place!

I’ve had a busy day filled with AnneTheRD client follow up work from yesterday plus a follow up with one of my in-person clients this afternoon. Time to get back after it! Have a great day, friends!
