Today, I present to you: the easiest dinner ever. Delicious and nutritious, too!

When Matt and I go to CrossFit together, we usually end up going in the late evening, so by the time we get home around 8 or 9, we want something really quick and easy. This is a meal I used to make all the time but completely forgot about until I unearthed it from my recipe collection for an AnneTheRD client looking for quick and tasty chicken dinner ideas!
The secret is diced tomatoes – I use these Muir Glen brand ones that have basil and garlic added in. So tasty.

To make this dish, simply drizzle a pan with a little olive oil, then throw the raw chicken, the can of tomatoes, and any other veggies you want (we used artichoke hearts and fresh mushrooms) on top.

Stir it around so it’s evenly distributed on top of the chicken.

We added on a huge pile of raw spinach as well, then popped a lid on the dish and let it cook for about 10 minutes or so on high, until the chicken was cooked through.

Et voila! That was easy. We served it with a side of quinoa but you could easily leave the quinoa out or have another veggie – perhaps roasted sweet potatoes? – on the side. Or just have the dish by itself! This dish got a big thumbs up from both me and Matt. Easy and tasty. We’ll be making variations of this more often now that I rediscovered it!

Speaking of my nutrition counseling clients, time to get back down to work! I had a new in-person client yesterday and have another new client via Skype later this afternoon. So far, I’m really loving having the private practice. It’s been so great to work with others one-on-one and to feel like I’m really helping people to be happier and healthier. I love it! I’ve been working with an interesting mix of clients, too – some that want help with GI issues or IBS, some dealing with specific medical conditions, and some looking for help with weight loss or intuitive eating. It’s also been great to have a mix of the counseling plus freelance writing/blog work. I like being busy and doing a lot of different things so it’s a perfect mix. Since I started the private practice (www.AnneTheRD.com) in February, I’ve had about 20 clients sign up, most of whom have signed up for multiple follow up sessions with me as well after the initial assessment. I’m happy to say I also just added two testimonials to my business website from clients that I’ve been working with on a continual basis for a couple months now. So far so good! Image may be NSFW.

I’ll also be spending some time later today packing because I’m flying off to Los Angeles tomorrow morning! I’ll be in Santa Monica for a couple days for a fitness event with Jamba Juice. Any tips from those of you in that area for fun things to do/places to eat? I’m so excited!
