Weekend Ski Trip Adventures

Good morning!

I had such a great weekend – as I mentioned, Matt and I headed up to Pennsylvania to go skiing with our friends John, Erin, Jack, and Megan. It was a blast – a great mix of relaxing and outdoorsy adventure, and it was great to have some quality friend time, too.

As I mentioned, John’s family owns a condo in Seven Springs, a skiing community in PA. It’s about 3.5 hours from DC and we all arrived around 11:30 on Friday night and chatted late into the evening.

On Saturday morning, before hitting the slopes, we had a feast! Erin offered to be in charge of breakfast and she brought ingredients to make this awesome egg roulade.

The recipe is from a magazine so I can’t share it, unfortunately! Apparently you can buy this magazine at Whole Foods – Erin said all the recipes are really delicious and have great instructions, too. I might have to pick up a copy!

Egg Roulade is definitely something I’m going to recreate – super easy and it looks so fancy! It’s basically a very thin baked omelette, and the key is to put the mixture on parchment paper so it doesn’t stick and you can roll it up after. The one we made was just a mixture of eggs, egg whites, a little spoonful of flour, and some wilted spinach (in the microwave), plus a little cheese and fresh chopped garlic.

While the girls cooked, Matt and Jack entertained us with their guitar skills. It was like one big free concert the whole weekend!

The eggs were baked for about 10 minutes and then they were ready for rolling!

The conditions were a little icy/slushy, but overall it was a good skiing day. I’m not exactly a great/experienced skier (remember my Skiing in the German Mountains: The Odyssey post from two years ago? Hilarious, if you missed it), but I’m happy to say I made it up to the blue slopes pretty quickly. Yay!

There was a really cool lake at the top of the mountain – so pretty!

We took about an hour long break for lunch but otherwise skied from about 11:30 a.m. until 5:30 p.m. We were pretty wiped by the time we took our last runs! Clearly, it was time for the Foggy Goggle, which is the indoor/outdoor ski bar at Seven Springs. I love the name. :)

They had a DJ playing and there were cool views of the slopes, too. Especially once the sun started to set!

After a couple beers, we headed back to the condo! Megan was in charge of the main course of dinner and I was in charge of salad, plus some fun wine.

Megan whipped up a delish chicken and artichoke dish in a white wine sauce that was served atop whole wheat pasta – Matt and I want to recreate this at home so I’ll share the recipe with our variations then. Stay tuned!

As for my salad, it was a big bowl of mixed greens, avocado, feta cheese, and string beans. Simple and tasty! Topped with balsamic vinaigrette.

Matt and I also brought a bunch of fun wine for everyone to taste with dinner. One of our wedding gifts from my aunt and uncle was membership to a cool wine club – they mail you two bottles every month with tasting notes, so we thought it would be fun to bring the wine for everyone to enjoy. We had the white wine (on the right) with salad, and the red wine with our main course! Both were big hits.

The rest of the evening was filled with more wine, chatting, guitar playing, and a little Cranium. :) Thanks for an awesome weekend, guys!

I got in a 5.5 mile run this morning and now I’m working on a few freelance jobs, plus finalizing everything to get my nutrition counseling business up and running! I’ve decided tomorrow is the big launch, so stay tuned – I’ll post in the morning with all the details and a link to my new business website! :) Exciting!
