The Breakfast Cookie

Morning, friends!

I decided to mix things up a little bit for breakfast this morning and finally try a Fitnessista breakfast cookie! I’ve been seeing these around the blog world for years – it was time.

Her recipe for the cookie (linked above) is more of a general guideline – the point is to get creative with it, so I did!

Here’s what I put into the mix:

  • 1/3 C oats
  • 1 Tbsp. almond butter
  • 1/8 C milk
  • Few hefty shakes cinnamon
  • 1 spoonful chia seeds
  • Few drizzles of honey

Basically, you mix together all the ingredients in a bowl, flatten them on an appetizer sized plate, and then pop it in the fridge overnight. In the morning, you will have a hardened version (e.g. cookie) ready to eat!

This morning, I topped the “cookie” with some plain yogurt and blueberries, plus another small drizzle of honey.

The verdict? It was good! I wish it were hard and crunchy like a cookie (it stays soft/gooey) but the flavor was good and it was fun to try something new – maybe next time I’ll microwave it a little in the morning to heat it up/attempt to make it crunchy? Not sure if that would work but it could be a fun twist on the original recipe, especially if you’re craving something warm. :)

Next time I also want to try making it with some mashed banana instead of honey because banana always makes oats really delicious. We just didn’t have any on hand – the horror! Gina used mashed banana in her original recipe and I bet it would be a really good addition.

Off to enjoy the rest of my breakfast and then head off to work. FRIDAY DANCE!!! :)
