Good eats + moves

Hey guys! I hope your weeks are going well. :) I’m sad my New Mexico adventures are over, but it’s been nice to be home and get back in the swing of things! On Monday, I slept in a bit (I didn’t get home from the airport until 1 a.m. on Monday – ack) and then enjoyed a delicious breakfast at home. Two fried eggs + leftover roasted sweet potatoes with ketchup + some greens (wilted in the microwave) and sauerkraut. Plus a couple strawberries! Filling and yummy!

The sweet potatoes were left over from this awesome dinner we had last Thursday right before I left town; Matt made us steaks with sauteed spinach, mushrooms, and sweet potatoes. So good!

As for fitness so far this week, on Monday I was thinking of hitting a lunchtime yoga class, but my buddy Heather messaged asking if I would be interested in a late afternoon run – sure, that sounded like more fun, especially since it was relatively warm out!

I don’t usually run late in the day (we met up around 4:15), but I was in the mood for it on Monday and it felt nice to get some fresh air and to catch up with my buddy! We ended up doing a loop and covering about 4 miles, keeping it casual on pace and incorporating some walks because there was a lot of uphill on the way back we weren’t feeling. :)

As for yesterday, I met up with Chelsea and Kathleen for a little Definitions boot camp via ClassPass (<- affiliate link for $30 off). Great class, as always – love interval workouts that keep you distracted and engaged – time flies!

This morning, I hit up Urban Athletic Club, also via ClassPass, and now I’m gearing up for my last day of English teaching! I mentioned awhile ago that I’ve been volunteer ESL teaching since January, and this is the final week of the winter term. It’s been about a 5 hour a week time commitment, and with work and travel ramping up even more over the coming months I wasn’t sure I’d be able to commit to teaching again for the spring session. So, I’m going to switch to tutoring for the meantime instead! That will just be 1 to 2 hours per week so it will be more manageable but a good way to stay involved. :) If you’re local and interested, I’ve been volunteering at Washington English Center in northwest DC (north of Dupont circle) – they are awesome and I highly recommend them if you want to get involved in spreading some love to the immigrant community in the area too! I’ve really enjoyed teaching – the students are so motivated and try so hard, and they are super thankful for the volunteers.
