Hey guys – happy Friday! I’m happy to report that Matt and I have successfully made it through all our leftover Thanksgiving turkey and turkey soup. No leftover left behind!
Since we kept the homemade turkey broth separate from the leftover turkey and any veggies, we were able to make variations on the soup to keep things interesting. After a couple days of the basic turkey + carrots + celery + rice soup, our final iteration was a Mediterranean twist that I threw together. I stirred in a ton of spinach, a can of chickpeas (drained), and a can of diced tomatoes (not drained). Plus the rest of the leftover turkey. It was a great combo! While making it, we also snacked on our of our favorite appetizers – sliced cucumber topped with a little olive oil, balsamic vinegar, salt, and pepper. Delicious!
I also polished off the rest of the leftover homemade cranberry sauce – one last microwave banana oatmeal combo with cottage cheese and cranberry. Yum!

Matt’s soccer leagues are all in winter hiatus right now so he expressed interest in joining me for a quick run this morning before work. Awesome! I didn’t bring my watch (still loving casual non-training mode) but we probably ran about 3 miles. It was nice to start the day together!
